One could go about giving each tapa a 1 - 10 point score in various categories if one wanted to get serious about it. However, in my experience, rigorous procedures and wine don't go that well together...which is going to be a problem when I finally get around to designing a double-blind wine tasting weekend I want to do eventually. To be honest, they were all pretty original and unique. I didn’t really have any strictly defined criteria for my ranking.
