Arroz con BogavanteThis weekend we finally got around to inviting our friends Agustín and Ana over so they could teach us how they make their Rice With Lobster dish that we had one time at their house. The day before, Ana and Marga went shopping to buy the lobster. The first fishmonger they visited had only one living lobster and some dead ones, so they went to another where they purchased two beautiful living lobsters. When they arrived on the day of the meal, they brought their paellera, a big dish for making paella, and their gas stove on which to heat the paellera evenly. These paelleras and stoves are sold at any Spanish hardware store and any self respecting Spanish household owns one. They also brought a lovely bottle of Riesling.

Pumpkin Almond RisottoMy wife and I have been slowly expanding our culinary abilities this year via online recipes, trying about a dozen new recipes this past year. I’m pretty sure my favorite is this pumpkin almond risotto that she made once, and I have repeated twice. It is absolutely delicious and dead simple to make, although it does require some attention and stirring just before serving.

Morcilla and Goat Cheese PieIf you asked me to list my top five favorite foods or beverages to consume in Spain, morcilla, goat cheese and red wine would make the list for sure. Morcilla is a spicy blood sausage. There are many types of blood sausage all called morcilla, but the most common and best is morcilla de León or morcilla de Burgos, which consists of pig meat, pig blood, pig lard, rice, onion and spices stuffed into pig intestine. The blood makes it jet black.

Recently, my wife came across a recipe for individual serving pies containing morcilla, red wine and goat cheese. When she mentioned it to me, I darted out to the store to buy the ingredients. Last Sunday, we made them. Needless to say, they were quite rich. Here’s the recipe:

Homemade Chinese Food

Chinese Almond Chicken Vegetables on RiceRecently my wife has discovered a blog by a Spanish housewife called Cocinando Entre Olivos (Cooking Among Olive Trees). I must say that I am extremely impressed with the quality of her posts, particularly the step-by-step photographs; you almost don’t need to be able to read the text. There really is a photo at every single step, often actually showing the addition of each ingredient. After several years of not adding any new recipes to our cooking repertoires, it’s quite refreshing to have some new things to cook. Recently my wife made some homemade chinese food, which consisted of cooking three recipes simultaneously (the recipes are in Spanish): Chinese Chicken with Almonds, Chinese Rice With Three Delights and Spring Rolls With Sweet-and-Sour Sauce.

Holy Mackerel with Garlic Recipe!

MackerelLiving in a fishing village has its perks. When the fishing seasons change, suddenly everyone knows someone that has some fish to get rid of. Mackerel season just started, and I’ve heard lots of people around town saying, “Hey, you want some mackerel? I’ve got some extra.” It’s unclear to me exactly why this happens. My best guess is that they overfish, either intentionally or by accident, especially at the beginning of the season when the fishing’s good, and they can only sell a certain amount of it legally in the market, so they give away the rest to friends, and the friends give it to their friends, and eventually the fish trickle down to all the dinner tables in town.

I don’t regularly interact with many of the fishermen, but the other day Bruno, my neighbor and local butcher, knocked on my door and offered me some. I threw it in the fridge and, the next day, asked him how I should prepare it. What follows is the incredibly simple recipe he gave me.

Spanish Goose Barnacle Recipe

Goose BarnaclesOn Saturday morning, my wife got a call from her boss, who had just sold his motorcycle, and, as part of the sale, had acquired way more barnacles than he could consume, so he offered us some. Barnacles are a special delicacy in Spain, particularly in northern Spain and Galicia. At Christmas time, barnacle prices can reach 99 €/kg ($65/lb)! The best, most expensive ones come from the Cantabrian sea on the northern coast of Spain. On Saturday we were given 1.5 kilograms of the good, expensive barnacles, so on Sunday we had a feast.

I had never eaten or cooked barnacles, so everything was new and fascinating to me. Here’s what I learned…
